Le mode de vie des nomades consistait \u00e0 se d\u00e9placer constamment d&rsquo;un endroit \u00e0 l&rsquo;autre dans les steppes et les montagnes, aussi bien par temps froid que par temps chaud. La nourriture des anc\u00eatres \u00e9tait donc riche en calories et tr\u00e8s nutritive. La plupart des recettes kirghizes actuelles ont \u00e9t\u00e9 transmises de g\u00e9n\u00e9ration en g\u00e9n\u00e9ration et constituent un \u00e9l\u00e9ment essentiel de la cuisine kirghize.  <\/span><\/p><p style=\"background: transparent; margin-top: 0pt; margin-bottom: 0pt;\"><span style=\"color: #0e101a;\"> <\/span><\/p><p style=\"background: transparent; margin-top: 0pt; margin-bottom: 0pt;\"><span style=\"color: #0e101a;\">La base de l&rsquo;alimentation des nomades kirghizes \u00e9tait auparavant principalement constitu\u00e9e de viande et de produits laitiers, avec de l&rsquo;orge et du bl\u00e9 tendre sous forme de c\u00e9r\u00e9ales et, plus rarement, du jugar (genre sorgho). Des c\u00e9r\u00e9ales et de la farine de bl\u00e9 ont \u00e9galement \u00e9t\u00e9 utilis\u00e9es lorsqu&rsquo;elles \u00e9taient disponibles. La viande consomm\u00e9e au Kirghizstan est principalement de l&rsquo;agneau ou du mouton, du cheval et parfois de la ch\u00e8vre ou du yak (surtout chez les Kirghizes du Pamir). Un tel r\u00e9gime riche en graisses convient \u00e0 un mode de vie physique et rude, en particulier dans les r\u00e9gions d&rsquo;altitude o\u00f9 les hivers peuvent \u00eatre longs, froids et rigoureux. Cela signifie que la cuisine \u00e0 faible teneur en cholest\u00e9rol n&rsquo;est certainement pas une caract\u00e9ristique de la cuisine kirghize.  <\/p><p>Si vous \u00eates v\u00e9g\u00e9tarien au Kirghizstan, vous risquez de rencontrer quelques difficult\u00e9s, mais il est toujours possible d&rsquo;acheter des fruits et l\u00e9gumes frais et du pain frais dans l&rsquo;un des nombreux petits stands ou bazars alimentaires qui sont omnipr\u00e9sents dans toutes les villes ou de manger dans les nombreux restaurants chinois (uniquement \u00e0 Bichkek et \u00e0 Osh). Cependant, si vous visitez un village, les seules options sont g\u00e9n\u00e9ralement des plats \u00e0 base de viande accompagn\u00e9s de pain, de th\u00e9 et de l\u00e9gumes occasionnels selon la saison.<\/p><p>Dans la culture kirghize, plusieurs plats sp\u00e9ciaux sont associ\u00e9s \u00e0 des \u00e9v\u00e9nements particuliers et \u00e0 des f\u00eates religieuses. Par exemple, pendant le Nooruz, il est obligatoire d&rsquo;avoir un \u00ab\u00a0Sumolok\u00a0\u00bb sur la table et pour le Nouvel An, il est indispensable d&rsquo;avoir une salade \u00ab\u00a0Olivie\u00a0\u00bb, adopt\u00e9e par la culture russe. L&rsquo;hospitalit\u00e9 kirghize accorde une grande importance \u00e0 la pr\u00e9paration de la nourriture pour les invit\u00e9s d&rsquo;honneur. Depuis l&rsquo;Antiquit\u00e9, les Kirghizes accordent une grande importance au service de la viande. L&rsquo;essentiel est ici appel\u00e9 \u00ab\u00a0tavak tartuu\u00a0\u00bb (distribution des parties d&rsquo;un b\u00e9lier coup\u00e9). Chaque partie de la viande est divis\u00e9e en \u00ab\u00a0ustukans\u00a0\u00bb (os avec la viande) qui sont distribu\u00e9s strictement en fonction de l&rsquo;anciennet\u00e9 des invit\u00e9s. La faute ou la violation de la hi\u00e9rarchie peut d\u00e9truire les relations entre les tribus et m\u00eame les transformer en ennemis irr\u00e9conciliables. Aujourd&rsquo;hui encore, les Kirghizes veillent \u00e0 respecter cette r\u00e8gle et, malheureusement, son non-respect peut encore ruiner une relation. Le Beshbarmak est le repas principal de la cuisine kirghize qui \u00e9tait populaire au sein du peuple nomade. Le nom du plat signifie \u00ab\u00a0cinq doigts\u00a0\u00bb, car les nouilles sont m\u00e9lang\u00e9es \u00e0 la main et mang\u00e9es \u00e0 la main.&nbsp;<\/p><p>Ce plat est pr\u00e9par\u00e9 \u00e0 partir de viande fra\u00eeche, ce qui signifie qu&rsquo;un mouton est tu\u00e9, d\u00e9pec\u00e9 et mis \u00e0 bouillir dans la marmite. Le lait peut ensuite \u00eatre recueilli dans un r\u00e9cipient en trayant la mamelle.<\/p><p>Le lait est ensuite baratt\u00e9 pendant un certain temps avant d&rsquo;\u00eatre laiss\u00e9 \u00e0 fermenter \u00e0 l&rsquo;int\u00e9rieur d&rsquo;une peau d&rsquo;animal, par exemple une peau de ch\u00e8vre.
