En Ouzb\u00e9kistan, boire du chai (th\u00e9) dans une chaikhana rel\u00e8ve encore des anciennes traditions d&rsquo;Asie centrale.  <\/span><\/p><p><span style=\"font-weight: 400;\">Le th\u00e9 en Ouzb\u00e9kistan est le plus souvent du th\u00e9 vert (kok chai en ouzbek) car il ne se contente pas d&rsquo;\u00e9tancher la soif et de rafra\u00eechir le corps, mais il aide \u00e9galement \u00e0 la digestion des aliments gras et souvent lourds. Le th\u00e9 ouzbek est tr\u00e8s souvent servi avec des tranches de citron et du sucre ou du miel. En permettant \u00e0 l&rsquo;h\u00f4te de remplir souvent la tasse, vous maintenez le th\u00e9 au chaud.&nbsp;<\/span><span style=\"font-size: 16px; font-style: normal; font-weight: 400;\">Enfin, le th\u00e9 est toujours servi et accept\u00e9 de la main droite et il est particuli\u00e8rement poli de placer la main gauche sur le c\u0153ur lorsque l&rsquo;on re\u00e7oit la tasse (conseil pour les data-widget_type=\"text-editor.default\">\n\t\t\t\t\t\t\t\t\t<p><span data-preserver-spaces=\"true\">Pilaff ou Plov (\u00e9galement connu sous le nom de Pilaff ou parfois sous le nom de Osh ou Ash, tr\u00e8s probablement d&rsquo;apr\u00e8s la ville d&rsquo;<a href=\"https:\/\/central-asia.guide\/fr\/kirghizistan\/destinations-au-kirghizstan\/osh\/\">Osh<\/a> au Kirghizistan, qui est consid\u00e9r\u00e9e comme l&rsquo;origine du riz rouge\u00e2tre valoris\u00e9 dans le plov)<\/span><strong><span data-preserver-spaces=\"true\"> <\/span><\/strong><span data-preserver-spaces=\"true\">est le plat principal de la cuisine traditionnelle ouzb\u00e8ke. Il s&rsquo;agit d&rsquo;un plat gras \u00e0 base de riz contenant des morceaux de viande, des carottes r\u00e2p\u00e9es, des oignons et parfois de l&rsquo;ail r\u00f4ti, du piment et de petits \u0153ufs de caille durs, selon l&rsquo;occasion \u00e0 laquelle le plov est servi et la r\u00e9gion d&rsquo;Ouzb\u00e9kistan.   <\/span><span style=\"font-size: 16px;\">Le terme anglais pilaf est directement emprunt\u00e9 au turc pilav, qui vient \u00e0 son tour du persan (classique) polow et d\u00e9rive finalement du sanskrit pula-ka, \u00ab\u00a0morceau de riz bouilli\u00a0\u00bb. Le terme anglais est toutefois influenc\u00e9 par le grec moderne pilafi. Le plov au poulet est rare, mais on le trouve dans des recettes traditionnelles originaires de Boukhara. Les samosas sont remplis de petits morceaux de viande, d&rsquo;oignons et d&rsquo;une certaine quantit\u00e9 de graisse provenant de la queue d&rsquo;un mouton. Aujourd&rsquo;hui, certaines sortes de samosa sont cuites dans des fours \u00e0 gaz ou \u00e9lectriques, ce qui est plus rapide et plus pratique, tout en permettant au samosa de conserver une grande partie de ses qualit\u00e9s d&rsquo;origine.   <\/span><\/p><p>Dans chaque r\u00e9gion de l&rsquo;Ouzb\u00e9kistan, la samsa est cuite \u00e0 sa mani\u00e8re, avec des ingr\u00e9dients secrets et un savoir-faire particulier. Le samsa vert tire son nom des herbes vertes utilis\u00e9es pour aromatiser la garniture. Les herbes sont ensuite ajout\u00e9es au m\u00e9lange et cuites bri\u00e8vement avant d&rsquo;\u00eatre utilis\u00e9es comme garniture pour la samsa. La p\u00e2te de la samsa verte est similaire \u00e0 celle de la samsa traditionnelle, compos\u00e9e de farine, d&rsquo;eau et de levure. La p\u00e2te est ensuite \u00e9tal\u00e9e et d\u00e9coup\u00e9e en cercles, et la garniture est plac\u00e9e au centre de chaque cercle. La p\u00e2te est ensuite repli\u00e9e sur la garniture pour former un triangle ou un carr\u00e9, et les bords sont cr\u00eap\u00e9s pour sceller la samsa. Il semblerait que les meilleurs cuisiniers de ce merveilleux plat de printemps se trouvent \u00e0 Parkent. Cette friandise n&rsquo;est disponible qu&rsquo;au printemps et au d\u00e9but de l&rsquo;\u00e9t\u00e9, lorsque les collines et les montagnes environnantes sont verdoyantes.<\/p><p>Le Mador Samsa contient des herbes fra\u00eeches vertes cuites \u00e0 la vapeur qui lui donnent un go\u00fbt particulier et tr\u00e8s diff\u00e9rent de celui de la version carn\u00e9e plus courante.
