Traditionnellement, ce plat est r\u00e9serv\u00e9 aux occasions sp\u00e9ciales. Le nom du plat vient du mot \u00ab\u00a0dogramak\u00a0\u00bb qui signifie couper en morceaux et fait r\u00e9f\u00e9rence \u00e0 la pr\u00e9paration du dograma. Celle-ci commence par la cuisson de plusieurs pains plats dans un tandyr (four en argile) et par l&rsquo;\u00e9bullition de la viande de mouton fra\u00eeche dans une grande marmite jusqu&rsquo;\u00e0 ce que la viande soit suffisamment tendre pour se d\u00e9tacher des os. Le pain est ensuite d\u00e9chir\u00e9 en petits morceaux - une t\u00e2che qui mobilise g\u00e9n\u00e9ralement toute la famille - et m\u00e9lang\u00e9 \u00e0 des tranches d&rsquo;oignon et \u00e0 de la viande d\u00e9chiquet\u00e9e. Il s&rsquo;agit de riz cuit avec de la viande (g\u00e9n\u00e9ralement de l&rsquo;agneau ou du b\u0153uf), des carottes, des oignons et un m\u00e9lange d&rsquo;\u00e9pices. Le plov est g\u00e9n\u00e9ralement servi lors d&rsquo;occasions sp\u00e9ciales et de c\u00e9l\u00e9brations. En principe, le plov a un statut similaire dans tous les pays d&rsquo;Asie centrale, mais surtout en Ouzb\u00e9kistan et au Tadjikistan, tandis qu&rsquo;au Kirghizstan et au Kazakhstan, les traditions li\u00e9es \u00e0 la viande de cheval dominent toujours.<\/p><p style=\"font-size: 16px; font-style: normal; font-weight: 400; text-align: justify;\">Le pilaf turkm\u00e8ne, ou plov, se distingue des plats similaires des pays voisins par des ingr\u00e9dients, des m\u00e9thodes de pr\u00e9paration et une signification culturelle uniques. Servi sur un grand plateau, le riz \u00e9tant d\u00e9pos\u00e9 au centre, le plov turkm\u00e8ne est souvent accompagn\u00e9 de cornichons, de salade ou de yaourt, ce qui permet d&rsquo;\u00e9quilibrer les saveurs et de favoriser le partage en commun. Ce plat rev\u00eat une importance particuli\u00e8re dans la culture turkm\u00e8ne.
