Lo stile di vita dei nomadi prevedeva un costante spostamento da un luogo all&#8217;altro delle steppe e delle montagne, sia con il freddo che con il caldo. Pertanto, il cibo degli antenati era ricco di calorie e molto nutriente. La maggior parte delle attuali ricette kirghise sono state tramandate di generazione in generazione e sono una parte fondamentale della cucina kirghisa.  <\/span><\/p><p style=\"background: transparent; margin-top: 0pt; margin-bottom: 0pt;\"><span style=\"color: #0e101a;\"> <\/span><\/p><p style=\"background: transparent; margin-top: 0pt; margin-bottom: 0pt;\"><span style=\"color: #0e101a;\">Alla base dell&#8217;alimentazione dei nomadi kirghisi c&#8217;erano prima soprattutto carne e prodotti caseari, con orzo e grano tenero sotto forma di cereali e, meno spesso, jugar (genere di sorgo). Venivano utilizzati anche grano e farina di frumento, quando disponibili. La carne consumata in Kirghizistan \u00e8 principalmente agnello o montone, cavallo e talvolta capra o yak (soprattutto tra i kirghisi del Pamir). Una dieta cos\u00ec ricca di grassi si adatta a uno stile di vita duro e fisico, soprattutto nelle regioni pi\u00f9 alte dove gli inverni possono essere lunghi, freddi e rigidi. Questo significa che la cucina a basso contenuto di colesterolo non \u00e8 certo una caratteristica della cucina kirghisa.  <\/p><p>Se sei vegetariano in Kirghizistan potresti incontrare qualche difficolt\u00e0, ma c&#8217;\u00e8 sempre la possibilit\u00e0 di acquistare frutta, verdura e pane fresco in una delle tante bancarelle o bazar alimentari onnipresenti in ogni citt\u00e0 o di mangiare nei tanti ristoranti cinesi (solo a Bishkek e Osh). Tuttavia, se stai visitando un villaggio, le uniche opzioni sono solitamente quelle a base di carne con pane, t\u00e8 e occasionalmente verdure, a seconda della stagione.<\/p><p>Nella cultura kirghisa, diversi piatti speciali sono associati a eventi particolari e festivit\u00e0 religiose. Questo, unito a una tradizione di grande ospitalit\u00e0, fa s\u00ec che alcuni piatti per le <a href=\"https:\/\/central-asia.guide\/it\/kirghizistan\/cultura-kirghisa\/feste-nazionali-kirghise\/\">feste nazionali<\/a> vengano preparati con grande devozione e persino con caratteristiche cerimoniali. Per esempio, durante il Nooruz \u00e8 obbligatorio avere in tavola un &#8220;Sumolok&#8221; e per il Capodanno \u00e8 d&#8217;obbligo l&#8217;insalata &#8220;Olivie&#8221;, adottata dalla cultura russa. L&#8217;ospitalit\u00e0 kirghisa d\u00e0 importanza alla conservazione del cibo per gli ospiti onorati. Fin dall&#8217;antichit\u00e0, i kirghisi hanno dato grande importanza al consumo di carne. La cosa principale qui si chiama &#8220;tavak tartuu&#8221; (distribuzione delle parti di un montone tagliato). Ogni parte della carne viene divisa in &#8220;ustukan&#8221; (ossa con carne) che vengono distribuiti rigorosamente in base all&#8217;anzianit\u00e0 degli ospiti. Una denuncia o una violazione della gerarchia potrebbe distruggere le relazioni tra le trib\u00f9 e trasformarle in nemici inconciliabili. Ancora oggi i kirghisi si assicurano di seguire questa regola e, purtroppo, non seguirla pu\u00f2 ancora rovinare la relazione.
