The spring festival Navruz means “new day” in Persian is celebrated in Uzbekistan on 21th of March.

Sumalek is a traditional Nooruz dish, comprised of wheat sprouts, mixed with water

It is cooked for an eighteen-hour constantly mixing to ensure that the Samalek didn’t stick to the bottom, burn or become lumpy. Over time this process transformed the starch in the flour and wheat shoots into sugar.
